Springs brings salads and light eating to the forefront

Spring has arrived in a flurry of rain showers and wind. While soup seems most appealing, Easter and other spring time events call for side salads and fruit filled desserts. Several requests came in for Eleanor Walter’s Broccoli Cauliflower Salad. This mixture of crunchy vegetables and creamy dressing goes well with any meat selection, is easy to prepare, serves a crowd and can be made several hours ahead of serving time.
