New pub opens in Deer Meadows

The Maverick is inside Sunday Bay Resort

DEER MEADOWS - A new pub-style restaurant and bar has opened at Sunday Bay Resort. The Maverick Pub has been open for three weekends and serves a variety of drinks, artisan pizzas and revolving food options.

The pub, which is owned by former University of Washington and NFL defensive lineman and Cheney native Steve Emtman, is in the downstairs of Sunday Bay Resort on Sunday Bay Resort Road North.

It's currently open Thursday-Sunday from 11 a.m.- 9 p.m. Monday service will likely be offered in August, general manager Tanya Lerum of Indian Creek said. The pub will also be open Tuesday, July 4.

"We've had a few good pops," Lerum said of pub attendance thus far. "Dinnertime tends to be busy while lunchtime has been slower so far."

The artisan pizzas offered include unique toppings. One has ham, bacon and pineapple, while another has steak bites and red-skin potatoes. A Mediterranean-style pizza with lamb and Tzatski drizzle is available, as is a cheeseburger pizza.

Other items currently on the menu include baguettes, salads, mac and cheese scoops, and chicken teriyaki with rice scoops. The food menu will change over time, Lerum said.

Drinks on tap include ciders, beers, IPAs, white wine, seltzers and spiked iced teas on a rotating tap. Customers can download the Digital Pour app to find out current availability and options.

Red wine is also available by bottle-only. Ready-to-go cocktails are also offered, though Lerum said leadership hopes to hire someone who can make drinks on the spot.

The pub has several sit-down tables, soft chairs, flatscreen TVs for sports viewing and a children's play area.

Currently, three employees work at the resort and pub, and more jobs are open to those looking for a gig, Lerum said.

"Right now we're offering counter service," Lerum said. "When we're more staffed, we're hoping to move to move to table service."

The new pub is part of an overhaul of Sunday Bay Resort. The 16 motel rooms can now be booked directly online.

"We've moved from vacation rentals to motels with direct booking," Lerum said.

Ownership is also constructing a separate bar, Harry's House, in the room next to the Maverick Pub. Lerum said that is expected to open by the end of the summer.

"We're going to have a 30-foot table right in the middle of the room," Lerum said. "You could come here on a date and not know who you're sitting next to."

Eventually, ownership also hopes to build a 9-hole golf course, while a driving range could open by July, Lerum said. The 18-hole Deer Meadows Golf Course closed in the late 2000s.

Emtman also owns Castaways Resort on Clear Lake in Medical Lake. Lerum said eventually, the two resorts will become "sister resorts."
